Pioneer Recipe: Danish Dumplings
In honor of Pioneer Day {July 24} this month we'd like to share a few pioneer recipes. {I don't know if any of us have actually made these recipes!} This one doesn't sound too unusual. Does anyone want to try them?
Danish Dumplings
1 cup milk
¼ cup butter
½ tsp. salt
1 slice white bread
Scant cup flour
2 eggs
1 tsp. sugar
Place milk and bread in skillet on stove and stir until bread is all mixed with milk. Add salt, sugar and flour and continue cooking, stirring constantly, until mixture sticks together. Remove from heat and add eggs, one at a time, beating after each egg. Drop from tablespoon into gently boiling soup. Dip spoon in soup between each spoonful so dumplings will slide off spoon easily. Cover kettle and simmer about 7 minutes until dumplings come to top of soup.
