Peach Pie

Pie shell, top and bottom, uncooked
5 cups sliced peaches (about 9 medium)
1 tsp. lemon juice
½-1 cup sugar, depending on sweetness of peaches
1/4 cup flour
1/4 tsp. cinnamon
2 Tb. butter or margarine

Prepare pastry. Prepare peaches. Add lemon. Mix dry ingredients and put in peaches. Put in shell. Dot with butter. Put top on. Bake for 35 to 45 minutes at 425°.

Eliza's notes: I made the pie filling in the summertime, dumped it in a freezer-safe bag, and froze it. Then I pulled it out in the middle of winter and made a "fresh" peach pie.  It was very good.
