Cake Mix Cookies

Cake Mix Cookies
1 box cake mix
¾ cup shortening
1 Tb. milk
2 eggs

Mix ingredients. Form 1-inch balls and bake at 350° for 9 minutes. Let cool in pan. Make a cookie sandwich with two cookies and frosting in the center. Some variations are Devil’s Food cake mix with cream cheese frosting, spice cake mix with cream cheese frosting, chocolate cake mix with peanut butter or chocolate chips, Devil’s Food cake mix with mint chips, or wrap the dough around pieces of chocolate candy.

I recently needed to make some quick cookies--these mixed together simply, I rolled small balls, baked them, and they were cooled and ready to go within a short time.  I made them with a devil's food cake mix and peanut butter chips {yummy!}.  If you want a flatter cookie you may want to flatten the balls of dough a bit before baking.  I think the peanut butter chips helped the cookies to hold a round shape.

{I tried this once with a cheap, cheap cake mix--some store had a deal on their brand.  No surprise that they weren't very tasty!  But, these were good today!}
