Summer Garden Salad


Here's a recipe for a colorful salad.  It's perfect for mid-summer when you might have a garden producing fresh vegetables or they are readily available locally.  Make sure and have some crusty bread to dip into the juices!

Summer Garden Salad
2-3 fresh large ripe tomatoes, chopped
1 large green pepper, chopped
1 medium onion, sliced
1 cucumber, sliced
1-2 Tb. oil (canola, olive, etc.)
1-2 Tb. balsamic vinegar
salt, pepper, and basil
feta cheese (optional)

Combine tomatoes, green pepper, onion, and cucumber in a bowl. Sprinkle with the oil and vinegar. Mix well. Add salt, pepper and basil to taste. Refrigerate to blend flavors. Add crumbled feta cheese for a Greek salad.
