Lemon Bars
Lemon Bar made with two eggs |
Crust:
2 cups flour
½ cup powdered sugar or brown sugar
1 cup butter (3/4 cup works)
Stir together the flour and sugar. Cut in the cold butter. Press in 9 x 13 inch pan. Bake 20 minutes at 350° or until lightly browned.
Top Part:
2-3 eggs, well beaten
2 cups sugar
1/3 cup lemon or Key lime juice
Grated rind of 1 lemon or lime
¼ cup flour
½ tsp. baking powder
Blend well (you can use a hand mixer). Pour the lemon topping over the warm crust and return to the oven to bake for 25 minutes at 350°. After it cools gently add a dusting of powdered sugar. Do this by adding a spoonful or two of sugar to a wire strainer and gently shaking over the top. The 3 egg version makes the cookies more like a lemon meringue pie.
Tiffany's Notes: These are super simple and delicious! If you haven't had a good lemon bar then you really owe it to yourself to use a good recipe and make some yummy ones!
