Mandarin Salad
The quintessential Relief Society green salad. I like to serve this salad with a raspberry vinaigrette, but you can also use the Mandarin Salad Dressing below.
Instead of iceberg and romaine lettuce, this has a spring mix and some peppery nasturtiums from our CSA.
Mandarin Salad
½ cup sliced almonds
3 Tbs. sugar
½ head iceberg lettuce
½ head romaine lettuce
1 cup chopped celery
1 (11 ounce) can mandarin oranges, drained
½ cup thinly sliced red onions
Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize. Remove from pan and cool. Put all ingredients in a bowl and toss with Mandarin salad dressing.
Mandarin Salad Dressing
½ cup oil
¼ cup cider vinegar
¼ cup sugar
2 Tbs. finely chopped fresh parsley
1 tsp. salt
¼ tsp. hot pepper sauce
Mix dressing and refrigerate. Serve over Mandarin salad.
