½ tsp. honey
1 to 1-1/3 cups warm water
2 tsp. instant yeast
2¾ to 3 cups flour
½ tsp. salt
1 Tb. olive oil

Combine all ingredients in a mixing bowl or bread machine until well kneaded, adjusting water and flour as necessary to make a soft dough. Let rise. Roll out onto pizza pans or cookie sheets.
Tiffany's Notes: Years ago I was looking for a good homemade pizza dough recipe. I came across this one in a video about making pizza that I checked out from the library. It is quite a simple dough and is very similar to many other pizza dough/bread stick dough recipes.
You can mix this up by hand or make it in a large mixer with a dough hook. I almost always make it in my bread maker (bread machine--either term works!). I love my bread maker! I had one that could handle a smaller batch like this. Now I have a large Zojirushi Breadmaker and a bigger family so I make this basic dough--but a larger version of this recipe with 4 1/2 cups of flour.
Becky posted her favorite recipe earlier for Pizza Dough. It is a very similar recipe. Her recipe has the larger amount of flour.
I've recently seen the idea for pizza bites floating around on Pinterest or in blogland. There is a great one on Our Best Bites. The idea is to take pizza dough, pinch off a little piece, flatten it, add a cube of cheese and a pepperoni, wrap the dough around the fillings, add the filled dough ball to a pan (like a bundt pan), and then bake it. When you eat it you dip the pizza bites into pizza sauce. Sounds yummy!
I did a simplified version--it's basically a stuffed pizza roll, a stuffed bread stick, a pizza pocket, or a calzone. Call it what you want to! I figured it was easier to make several large rolls than bunches of little ones. :)
I've made similar pizza pockets before but have always included sauce inside. They are yummy but tend to get a little messy to make!

I love this basic recipe. I use it all the time for pizza dough, bread sticks, French bread, and other stuffed breads like this one.
I brushed these with an oil and sandwich sprinkle mixture. (A Penzey's dressed up garlic and herb mix.)
