Carrot Cookies with Orange Icing (Heritage Recipe)
Instead of pumpkin cookies, try this alternative orange cookie recipe for Halloween.
Carrot Cookies with Orange Icing (Heritage Recipe)
1 cup butter or shortening
¾ cup sugar
2 eggs
1 cup cooked, mashed or finely shredded carrots
2 cups flour
2 tsp. baking powder
½ tsp. salt
¾ cup coconut or 1 cup chopped nuts
1 tsp. grated orange peel, optional
1 tsp. orange extract, optional
Cream butter and sugar. Add eggs and beat until fluffy. Add the rest
of the ingredients and mix well. Drop by teaspoonfuls on a greased cook sheet.
Bake at 350° for 10 minutes. Cool and then ice with a frosting made from 1 Tb.
orange juice, 2 tsp. grated orange peel, 1 cup powdered sugar, and 2 Tb. soft
butter.
To quickly prepare the carrots, finely shred them in a food processor
and then put them in the microwave for 1-2 minutes to cook.
