Corn Bread



1 cup cornmeal
1 cup flour
2-4 Tb. sugar
1 Tb. baking powder
1 tsp. salt
1/3 cup vegetable oil
1 egg, lightly beaten
1 cup milk

Combine corn, flour, sugar, baking powder and salt.
Combine oil, egg and milk in small bowl; mix well. Add milk
mixture to flour mixture. Bake in greased 8-inch pan for 25
minutes at 400°. For muffins: bake 15 minutes at 400°.

(Notes: I find that I like these better if I use 1/2 cup of sugar and melted butter instead of oil.)

  1. Nice. My husband and kids like to eat cornbread with syrup on it. They'd probably like the version with more sugar in it as well -- I should probably try that sometime. I rarely care for cornbread, but when I do have some, I like it with less sugar and a bit of butter.

  2. One time I forgot to put the sugar in the cornbread and it was not a big hit! I have never forgotten again;-)
