Broccoli Soup


Broccoli Soup
Prepare:
1 to 2 cups chicken, cooked and cubed
1 diced onion or leek, sautéed in butter with dash of Worcestershire sauce
1 to 2 lbs. broccoli, cooked and chopped
1-2 small red potatoes, cooked and diced, optional

In separate dish or pan melt:
1/2 cup margarine or butter
Whisk in:
1/2 cup flour
1 tsp. salt
4 cups milk
Cook until thickened. 

Add:
1/4 cup Parmesan cheese
2 cups chicken broth

It is possible to simmer the soup until uncooked broccoli and potatoes are done. Dish up. Top each dish with grated cheddar cheese and croutons. May salt to taste.

You can use canned chicken and leftover cooked vegetables (onions, potatoes) to make this even more quickly.
