Chicken Pesto
Boneless, skinless, chicken breasts, tenderized thin
Pesto (Costco has a great Pesto)
Bacon, crumbled or Ham, chopped
Mozzarella Cheese, shredded
Tomatoes, chopped
Trim all fat off the chicken and tenderize it pretty thin. To minimize the mess, place chicken in a Ziploc bag to tenderize it. Place chicken in a single layer on a cookie sheet, preferably on parchment paper. Cook chicken with salt and pepper at 350 F for 20-25 minutes, until done. Spread lightly with Pesto as if buttering toast. Top with bacon, tomatoes and cheese. Broil until the cheese just starts to brown.
Becky's Note: I got this recipe from a friend in my neighborhood. She served it at a Christmas party for 300+ people. I was amazed at how much one pan could feed. It looked fancy and was simple to assemble. If you use the parchment paper, the clean up is minimal. It is delicious and has become one of my favorite recipes!
