Baked Sweet Potato Fries

A variation of baked potato wedges using sweet potatoes.

I love candied yams, but I sometimes feel like putting so much sugar on my sweet potatoes almost negates the positive effects of all the nutrients in them. So sometimes I enjoy making sweet potato fries instead. I had never heard of them before until I moved here, but sweet potato fries are a popular appetizer in the South. To make baked sweet potato fries, peel your sweet potatoes and then follow the recipe for Crispy Potato Wedges. It seems like the sweet potatoes need a little more salt than the recipe calls for, and you need to be careful to watch them because they don't taste very good if they burn. Salt and pepper on sweet potato fries make an interesting and tasty blend of flavors! I brought these to a barbecue recently and got a lot of compliments.
