BLT Sandwich {Bacon, Lettuce, and Tomato}

Another great summer meal is a BLT Sandwich.  It's extra yummy if you have fresh garden tomatoes and homemade bread. 

BLT Sandwich
2 slices of bread
Mayonnaise or Miracle Whip
several tomato slices
torn lettuce leaf
2-3 slices of cooked bacon

Assemble the sandwich to your preferences and eat!  I like to put the tomatoes between the bacon and lettuce so they don't get the bread soggy.  You can also toast the bread before making the sandwich.  {I had Turkey Bacon on hand so I used it for this sandwich--it was fine.}

You may want to buy the pre-cooked bacon to make this a super easy meal.  To cook your own bacon you can microwave it or pan fry it.  The easiest way I've found to cook it is to bake it in the oven.  Line a shallow pan with foil, lay the bacon on the pan in a single layer, and bake at 375 degrees until done (about 8-10 minutes).

  1. We like to make BLATs. Bacon, lettuce, avacado and tomato! The avacado takes the sandwich to a whole new level. Add some salt and pepper too.

  2. Mike and I take after Emily:) We are big avocado fans on BLTs. We also sprinkle crumbled bleu cheese on it and they are amazing! (I don't know if they still count as a BLT when you add a few things, but they are definitely one of our favorite sandwiches.)
