Judy's Cobbler
A great recipe from cousin Emily...
This is the only Peach Cobbler recipe I like to
make. My Mother has been making it for
as long as I can remember.
Judy's Cobbler
1 cup sugar
1 cup flour
1 1/2 tsp baking powder
dash salt
1 cup milk
1/2 cup butter or margarine
2 cups chopped fresh fruit or 1 quart peaches with 1 cup
juice.
Preheat oven to 350 degrees. Melt butter in 9 x 13 pan in oven until
bubbly. Meanwhile mix flour, sugar, milk, baking powder and salt. Pour batter
into pan over melted butter, then spoon fruit and juice over the batter. DO NOT STIR.
Bake for 45 minutes to 1 hour.
Serve hot with a scoop of vanilla ice cream.
Note: When making peach I add 1/2 tsp cinnamon to the
flour.
