Meatball Soup (easy)
Here's an easy version of meatball soup that is easy to adapt to your tastes and what you have on hand.
Meatball Soup
1-1/2 cups beef broth (water with bouillon is fine)
1 (14 oz) can of diced tomatoes
1-1/2 cups water
1 tsp. Italian seasoning, your choice
8-16 frozen cooked meatballs
1/2-1 cup dry pasta
2-3 cups frozen, mixed vegetables (or chopped fresh vegetables)
Shredded Parmesan cheese, optional
Bring the liquids, seasonings, and meatballs to a boil. Add the pasta and vegetables and cook until the pasta and vegetables are tender, about 10 minutes. Ladle into bowls and sprinkle with cheese, if desired.
