Spinach Salad with Poppy Seed Dressing
Spinach Salad
1 bunch spinach, cleaned and torn in bite-size pieces
1 head lettuce, in bite-size pieces
½-1 pkg. bacon, cooked and crumbled
1-2 cups fresh mushrooms, sliced
1-2 cups cottage cheese
Combine all in a large bowl right before serving. Serve with Poppy Seed Dressing.
Poppy Seed Dressing
Place in a blender and mix until thoroughly blended:
¼ cup onion (white, green, or red)
1/3 cup vinegar
1 tsp. powdered mustard
1 tsp. salt
Add and mix in:
½-¾ cups sugar
While the blender is running pour slowly in:
1 cup oil
Add and mix briefly:
1 Tb. poppy seed
Chill until needed. Serve with spinach salad or any salad. This is OK without the poppy seeds, too.

I love this salad! It is one of my all time favorites! The salad dressing is so simple and both of them always get rave reviews.
ReplyDeleteI love making the dressing with different colored onions. Traditionally we've made it with green onions (including some tops) and it is a green dressing. When you make it with red onions it is a beautiful pink color.
When you make the dressing make sure you don't mix in the poppy seeds until the very end. (A blender or food processor are your best bets to make the dressing.)
