Creamy Fruit Salad Dressing

Creamy Fruit Salad Dressing
½ cup pineapple juice
¼ cup lemon juice
½ cup sugar
2 Tb. cornstarch
Dash salt
½ cup water
½ pint whipping cream
2 Tb. sugar
Bring pineapple and lemon juice to boil. Mix sugar, cornstarch, salt, and water together and add to juices. Bring to boil, stirring until thick and clear. Cool. Whip cream and add sugar. Fold into cooled mixture. Chill.
Tiffany's Note: This is a great basic fruit salad dressing--please see the other posted version of this recipe. It is very easy to make with the juice reserved from a can of pineapple. I believe this recipe (or both?) come from my grandma Beverly. When she showed me how to make this she added a tablespoon or two of butter to the dressing while it was cooking and didn't add the cream. I love it with the cream, but usually make it without.
