Fruit Salad Dressing

Fruit Salad Dressing
Blend together:
¼ cup sugar
1½ Tb. cornstarch
1/8 tsp. salt
½ cup pineapple juice
Cook until mixture boils. Stir constantly.
 
Quickly whisk in:
1 egg yolk
 
Mix well. Cook until thickened. Remove from heat and add:
2 Tb. lemon juice
 
Cool completely. When ready to serve, add:
1 cup whipped cream or whipped cream substitute

Tiffany's Note: This is one of two very similar Fruit Salad Dressings in our collection.  Both recipes will be published in separate posts.    The other is called Creamy Fruit Salad Dressing.  They are a wonderful way to add a little something extra to a basic fruit salad.  The easiest way to get the pineapple juice is to use a can of pineapple chunks or tidbits in the fruit salad--just drain the juice off and use it to make this dressing.
