Cauliflower Salad

A colorful and fresh salad recipe.
Cauliflower Salad
4 c. thinly sliced cauliflower
1/2 c. chopped olives
1/3 c. finely chopped green pepper
1/4 c. chopped pimento
3 TB finely chopped onion

Mix and pour over vegetables:
9 TB olive oil
3 TB lemon juice
3 TB white, wine, or cider vinegar
1 tsp salt
1/4 tsp sugar
dash of pepper

Stir well and marinate for 1 hour or all day. A large ziploc freezer bag works well for this step.

Mom's notes: when I first had this I loved it, but this seemed to need some flavor. I added a few dashes of balsamic vinegar. I think fresh basil or something else would help this be outstanding. Along with the standard white cauliflower, I had green and orange cauliflower, which makes this gorgeous. Missing are the olives.
