Strawberry Fields Salad

This is a lovely spring salad served as a great side dish or as a main dish salad. 

Strawberry Fields Salad
4 cups mixed green leafy lettuce
1 cup strawberries, hulled and sliced

Choose 2 or more of the following optional ingredients to add to the above:
jicama, peeled and sliced thinly
chopped roasted pistachios, roasted almonds, or crunchy candy pecans
sweetened, dried cranberries
1 small red onion, sliced thin
crumbled feta cheese
drained mandarin oranges
grilled chicken

Toss with Strawberry Fields Salad Dressing and serve.

Tiffany's Notes: Along with the salad dressing--I also reviewed other Strawberry Fields recipes online.  I thought there would be one standard recipe, but there really were about 10 different variations.  This recipe adds to the family cookbook's original list of ingredients.

To serve this salad to my family (full of picky children) I put all the optional ingredients in separate bowls so they could create their own salads.  Our choices--green lettuce mixed with spinach, strawberries, toasted almonds, craisins, and feta cheese.  It worked well and several of my non-salad eaters ate it.  It was great! 

After you mix the salad together and add the dressing it won't keep well--so just make as much as you need at a time.  It's not hard to eat it all!  With the chicken it would be a great dinner salad.

  1. Looks delicious! I wonder if my kids would eat that as a main dish salad with the chicken. We have a lot of strawberries right now.
