Cucumber Sandwich

Cucumber Sandwiches

White bread, crusts trimmed if desired
Light mayonnaise
Cucumber, peeled and sliced

Assemble like a sandwich. Cut in triangles with a serrated knife.

Becky's Note: I love that you can adjust a sandwich for personal taste.  For this sandwich, I toasted my bread slightly because I thought it would be a great contrast to the cool cucumbers.
