Lime Rice
Lime Rice
In a fry pan, sauté the following:
2 Tb. butter
1 yellow onion, chopped
4 cloves garlic, minced
In a large pot bring the following to a boil:
6 - 2/3 cups water
8 tsp. chicken bullion (or cubes)
½ bunch cilantro, chopped
2 tsp. cumin
2 small cans diced green chilis
1 Tb. lime juice
½ tsp. salt
3 c. long grain rice
Add the sautéed onion and garlic, then add 3 cups long grain rice. Reduce heat, cover and simmer for 30 minutes. Cook up to 15 more minutes until all liquid is absorbed. Serves 25. You can also sauté the onion and garlic and then mix everything and cook it in the rice cooker.
I love this rice served in a salad (Cafe Rio type salad, for those people familiar with this restuarant). I top a tortilla with rice, black beans, chicken, romaine lettuce, salsa, lime cilantro dressing, and tortilla chip crumbles. Yummy!
