Coffee Cake

1½ cups flour
¾ cup sugar
2 tsp. baking powder
¼ tsp. salt
¼ cup oil
½ cup milk
1 egg, beaten

Combine dry ingredients. Add wet ingredients until just mixed. Spread in greased 9 inch pan.

Streusel topping
Combine and sprinkle over batter:
1/3 cup brown sugar
¼ cup flour
1 tsp. cinnamon
2 Tb. butter
½ cup chopped nuts, optional

Bake at 375° for 25 to 30 minutes until a toothpick inserted in the middle of the cake comes out clean. Variations: add ¾ cup raisins, semi-sweet chocolate chips, chopped apples, drained mandarin oranges, etc. Cook in a Bundt pan for a fancy breakfast. To use a Bundt pan, grease the pan well, and sprinkle the topping into the pan, evenly around the bottom of the pan. Pour the batter on top, covering the topping. When baked, invert as soon as it comes out of the oven, before the sugar makes it stick to the pan.
