Vanilla Unbaked Cookies

Unbaked cookies are a favorite around our household. They are simple to make, and don't use the oven —which is a great thing when it gets hot in the summer. My family likes the vanilla version of the cookies, instead of chocolate.



Vanilla Unbaked Cookies

Mix in a large saucepan on stovetop:
2 cups sugar 
1/2 cup milk
1/2 cup margarine
Bring to a boil and boil for one minute. Remove from heat and add:
1 tsp. vanilla 
1/2 cup peanut butter (chunky or creamy) 
3-1/4 cups instant oatmeal
Drop large spoonfuls of the mixture onto wax paper to cool. Store in an airtight container after the cookies have completely cooled and set up.

Melinda's Notes: If you double the recipe, cook the sugar/milk/butter mixture for 2 minutes instead of 1, so your cookies will set up properly.

If you want to, you can add 4 Tb of cocoa to the sugar/butter mixture before you boil it to make the chocolate version. Sometimes I will spoon out half the cookies and then add a handful of chocolate chips and some mini marshmallows to the remaining mixture, so I will have both vanilla and chocolate rocky-road cookies.
