Refrigerator Cookies
Blend:
1/2 cup shortening or butter (I use butter)
1/2 tsp. salt
1/2 cup brown sugar
1/2 cup sugar
1 egg
Sift dry ingredients and blend:
1-1/2 cups flour
1/4 tsp. baking soda
1/2 cup chopped nuts, optional
Shape into a roll about 2-1/2 inches in diameter. If desired, roll the cylinder of dough in sugar, colored sugar, nuts, sprinkles, or coconut to coat the sides. Roll in waxed paper then wrap in plastic and refrigerate overnight or several hours. Cut dough into thin slices and bake at 350° for 8 to 10 minutes. The dough also freezes well. You can make a double batch and freeze a roll for later.
Eliza's notes: This cookie has a butterscotch taste because of the butter and brown sugar. It is an old recipe that we grew up making.
