Slow Cooker Beef and Cabbage Soup
1 lb. of Ground Beef (85/15 or 90/10)
1 red onion diced
1/2 cup of diced celery
1/2 cup of diced carrot
1 tsp. of onion powder
1 tsp. of celery salt
2 tsp. of garlic powder
11/2 tsp. of dried oregano
1/2 tsp. of paprika
1 tsp. of salt
fresh cracked black pepper
1 cup of chopped mixed peppers
1/2 head of cabbage, chopped
1 sweet potato, chopped in small chunks
1 or 2 cans tomatoes
4-6 cups of beef broth
Brown ground beef. Place ground beef and all other ingredients in a slow cooker and stir. Cook 8 hours on low or 4-6 hours on high, until the sweet potato chunks are soft.
This recipe can be modified in all sorts of ways. Feel free to add whatever vegetables you want. I bet it would be really good with Italian sausage instead of ground beef. I was a little skeptical about adding the sweet potatoes to soup like this, but I decided to try it and it was actually good this way, so give it a try! This is one of those dinners that you can't possibly feel guilty about eating.
I originally found this recipe here and modified it slightly. I figure there's no point in using a crock pot if you have to cook everything before putting it in, so I didn't bother with sauteeing the vegetables, and they cooked just fine. You could probably also do this on the stove and just simmer until the vegetables are soft.
