Sweet and Sour Ham Stir Fry

This is a great recipe to use up leftover ham.  Stir together and cook this simple combination of vegetables, pineapple, and ham and spoon on top of some cooked rice.
Sweet and Sour Ham Stir Fry
20 oz. can pineapple chunks
2-3 cups diced, cooked ham
1 cup water
1/4 cup vinegar
2 Tbs. brown sugar
2 tsp. soy sauce
1 large clove garlic, minced 
1 16 oz. bag frozen stir fry vegetables
3 Tbs. cornstarch
1/4 cup water

Drain pineapple chunks, reserving juice.  In a large skillet add pineapple juice, water, vinegar, sugar, soy sauce, and garlic.  Bring to a simmer.  Add the stir fry vegetables and cook about half the time listed on the package.  Add the diced ham and pineapple chunks and cook for another few minutes.  Stir occasionally.  Combine cornstarch and water; gradually stir into sauce.  Cook, stirring, until thickened.  Serve over cooked rice.  

Tiffany's Notes: This recipe is adapted from one found in a church cookbook my mother gave me several years ago.  However, the original recipe is for a chicken version and is called Hawaiian Chicken.  So, you can obviously go with this basic recipe and substitute chicken or other meats--or make a meat-free version.  I do like this sweet and sour sauce and pineapple combination!
