Fresh Peach Pie (Heritage Recipe)
Prepare and bake single-crust pie shell. Cool.
Cook together until transparent:
½ to 1 cup sugar
2 cups fresh peaches, mashed
2 Tb. cornstarch (heaping)
Mix together and stir into the cooked mixture:
2 cups fresh peaches, sliced
2 Tb. lemon juice
Put into pie shell and chill. If you use canned peaches, you will need to drain them well and use extra cornstarch to make up for the extra juice. From Beverly Wessman.
Becky's Note: I have a great memory of visiting Grandma and eating this pie. It tastes like eating a peach. It reminds me of Fresh Strawberry Pie. My pie turned out a little soupy, but we may have been a little impatient to eat it and not allowed it to set up quite long enough. ;-)
