Baja Sauce
Baja Sauce is a very easy, tasty, rich sauce for tamales and enchiladas. It helps tone down spicy dishes, while still adding plenty of flavor.
Baja Sauce
2 (8 oz.) packages cream cheeseIn a blender, puree the milk and undrained chiles well, until very smooth. Pour into a medium saucepan. Add the cream cheese, and warm up on medium-low heat, stirring occasionally until the cream cheese melts, and the mixture is smooth. This can take about 15-30 minutes. If you heat the mixture on too high of a heat, it will boil and most likely separate. Add a dash of salt. Serve over green corn tamales or enchiladas.

1 (4 oz.) can diced green chilies
Dash of salt
Melinda's notes: This sauce is definitely not low-calorie. Save it for special occasions! The original recipe had cream instead of milk, so I cut out the few calories I could without compromising the flavor.
