Porcupines
1/2 lb. ground beef
1/4 cup uncooked rice
1/4 cup milk or water
1/4 cup uncooked rice
1/4 cup milk or water
2 Tb. chopped onion
1/2 tsp. salt
1/4 tsp. celery salt
1/8 tsp. garlic salt
Dash of pepper
1 (8 oz.) can tomato sauce
1-1/2 tsp. Worcestershire sauce
1 cup water
Mix beef, rice, milk, onion, and seasonings. Form into 4 medium balls. Fry in oil, turning frequently until light brown but not crusty. Add tomato sauce, water, and Worcestershire sauce. Mix well. Cover and simmer 45 minutes over low heat. Add more water if the liquid cooks down too much.
Eliza's note: I don't like frying food so I baked these meatballs. I put them in a lightly-greased pan and baked them at 400 for about 15 minutes until they were brown. Then I poured the sauce over, covered the pan, and baked them for an additional 30-40 minutes.
