Au Gratin Potatoes
6-8 potatoes, peeled and diced
¼ cup butter
2 cloves garlic, pressed
¼ cup flour
½-1 tsp. salt
1/8 -¼ tsp. pepper
2 cups milk
1 cup dry bread crumbs
1 cup grated cheese
1 tsp. paprika
Boil the diced potatoes in just enough water to cover until they are not quite cooked or cook in the microwave with a tiny bit of water. Drain. Melt butter in a saucepan. Add garlic and cook gently. Mix in flour, salt and pepper. Add milk and cook until thickened. Thoroughly butter a baking dish. Layer potatoes in dish. Pour sauce over potatoes. Scatter bread crumbs, cheese, and paprika over (go easy on the paprika!). Bake for 20 minutes at 400°. This is enough to fill a 9x13 pan.
