Peppermint Bark
12 oz. (about 2 cups) semi-sweet chocolate chips (good quality)
12 oz. (about 2 cups) white chocolate chips (good quality)
1/2-1 tsp. peppermint extract or less of peppermint oil (to taste)
1/3 cup crushed candy canes
Melt the semi-sweet chocolate chips and stir until smooth. About 60
seconds in a microwave is usually enough. Pour onto wax paper, spread into a
thin layer, and let harden. You can speed things up by putting it in the
freezer for a few minutes, if you want. Melt the white chocolate chips and
peppermint flavoring together and stir until smooth. Pour over the hardened
chocolate and spread evenly. If the semi-sweet chocolate is cold, you need to
work very quickly at this point. Sprinkle the crushed candy canes over the top and press them
into the melted chocolate a bit. Let cool until hard. Then you can break it
into pieces and serve.
