Easy Tomato Basil Soup

Tomato Basil Soup

2 TB. butter or olive oil
1  medium onion, diced
1 clove garlic, minced
6 oz. cream cheese, softened
2 (10 3/4 oz) cans condensed tomato soup
1 qt. bottled tomatoes or 2 (14.5 oz) cans tomatoes, undrained
1 cup milk
1/2 cup fresh basil, thinly sliced

Sauté onion and garlic in butter until soft. Add cream cheese and tomato soup and wisk together until well blended. Add tomatoes and juice. Use an immersion blender or blender to puree the mixture until smooth. Return to pan, add milk and basil. Gently warm over low heat until heated. Do not allow to boil.

This is a good, filling soup. It is even good cold. The fresh basil is essential.
