Salsa, Corn

Mix to taste:
1 avocado, diced
1 tomato, diced
1 green onion, sliced
1 cup cooked corn (frozen and thawed works fine)
½ cup cooked black beans, rinsed well (optional)
1 Tb. lemon juice
1 tsp. Adobo or chili powder seasoning
1 Tb. oil (optional)
¼ tsp. cumin
¼ tsp. oregano
Salt and pepper

Becky's Note: Eliza made this yummy salsa (which we ate as a salad) for a recent family dinner.  I don't know if the kids loved it, but the adults sure thought it was good!

  1. I'll have to try that version! I make a similar salsa that is super easy to whip up (no cooking) and people go crazy for it:

    Dump-it Salsa
    1 can black beans rinsed
    1 can diced tomatoes (drained a little)
    1 can corn rinsed
    1 onion diced
    Juice of 1-2 limes
    1 spoonful sugar (I just use a normal spoon)
    3-4 cloves garlic diced
    Salt and pepper
    As much cilantro as you want!
    Sometimes I add diced green onion.
