Vanilla Ice Cream with Fruit

Vanilla Ice Cream with Fruit
2¼ cups sugar
½ tsp. salt
1½ Tb. vanilla extract
2 cups half and half
4 cups whipping cream
4 cups fruit, pureed

Prepare the fruit (strawberries, raspberries, peaches, etc.) and puree in a blender. You can leave a few larger chunks of fruit. Dissolve the sugar in the fruit and mix with the rest of the ingredients. (You can follow the Vanilla Ice Cream recipe and scald the half and half, if you want, but it isn’t necessary.) Freeze in an ice cream freezer. The amounts here fill a 6-quart freezer.

Tiffany's Notes: This was a yummy homemade ice cream!  We made this recipe as a mixed fruit ice cream for New Year's Eve.  We have a 4 quart ice cream freezer--I had 4 cups of whipping cream but no half and half.  I used the sugar, salt, vanilla, 4 cups of cream, 4 cups of fruit, and added milk to the fill line.  I mashed together 4 cups of fruit--just whatever I had on hand.  I used the juice of one lemon, the juice of two oranges, about 3 bananas, and mixed frozen fruit (rasperries, blackberries, other assorted fruits).  It turned out creamy and good! 

It is similar to Mother's Easy Ice Cream.
