Lemon Bread

Lemon Bread

Bread batter:
¾ c. margarine or butter
1½ c. sugar
3 eggs
1 tsp. lemon extract
¼ tsp. salt
¼ tsp. baking soda
¾ cup buttermilk
2½ c. flour
1 grated lemon rind
2-3 drops yellow food coloring, optional
Glaze:
1 c. powdered sugar
1-2 Tb. lemon juice
Cream margarine, sugar, and eggs. Add salt, soda, and lemon extract. Stir well. Add flour alternately with buttermilk. Stir in lemon rind. Bake in 2 greased and floured loaf pans at 325° for 45-55 minutes, until pick comes out clean when tested. Allow to cool 10 minutes. Remove from pans. Top with glaze. For glaze, mix powdered sugar with lemon juice. Stir until smooth. Spoon glaze over warm bread. Cool completely before slicing.

Melinda's Notes: This makes about 4 small loaves. I baked mine 40 minutes.
