Belgian Waffles, Quick

2 cups cake flour (or regular flour + 2 Tb. cornstarch)
2 tsp. baking powder
½ tsp. salt
4 large eggs, separated
2 Tb. sugar
½ tsp. vanilla extract
4 Tb. butter, melted
2 cups milk

Preheat the waffle iron according to the instructions. In a small bowl, stir together flour, (cornstarch), baking powder and salt. Set aside. Separate eggs, with the whites in one bowl for whipping, and the yolks in a large mixing bowl. Beat the egg whites with an electric mixer until soft peaks form. Set aside.
In the large mixing bowl, beat together egg yolks and sugar until the sugar is dissolved and the eggs are a pale yellow. Add the vanilla, melted butter, and milk to the eggs and mix to combine. Add the flour mixture and mix until just blended. Using a rubber spatula, gently fold the egg whites into the waffle batter. Use non-stick cooking spray on the waffle iron. Bake in waffle iron and serve immediately. Makes about 6-7 waffles.

Becky's Note: I usually use my Grandma Glade's Waffle recipe.  I decided to try this recipe for our first Sunday of the month, waffle dinner.  It was a hit but I had to wash three more dishes, so I don't know that I will be making them often ;-)
