Watergate Salad (aka Pistachio Salad)

Watergate Salad (Pistachio Salad)
8 oz. Cool Whip
1 (20 oz.) can crushed pineapple, undrained
Pecan pieces
1 small pkg. instant pistachio pudding
1 pkg. mini marshmallows
 
Mix all the ingredients and refrigerate until it sets up and the marshmallows soften.

Tiffany's Notes: if you want to you could call this a green salad.  ;)  Okay, so this is not much of a "salad" but it is a lovely shade of green.  It's the perfect festive color for this month.  

It really should be a dessert but we serve it as a side dish (most recently at Thanksgiving dinner) and call it good.  Why not eat your dessert with dinner?  :)  
It's super easy--just stir together the ingredients and chill.  It is best after it's had at least half a day to chill.  
I usually dump the pineapple in a big bowl, stir in the dry pudding mix, and then fold in the Cool Whip and marshmallows.

  5. Fantastic no matter what you call it. I had it made & in fridge in less than 5 minutes. I added coconut - delis! !!
