Buttermilk Biscuits

Buttermilk Biscuits
2 cups flour
2 tsp. baking powder
1 tsp. salt
¼ tsp. baking soda
1/3 cup shortening or butter
¾ cup buttermilk (may need up to 1 cup)
1 Tb. sugar, optional
Mix dry ingredients and cut in shortening. Stir in buttermilk. Knead 10 to 12 times, just until the dough
sticks together. Do not handle too much. Roll out ½ inch thick. Cut out circles. Bake 10 to 12 minutes at 450°. Makes about 9-12 biscuits.

Tiffany's notes: Buttermilk always changes the texture of the final baked good.  These are softer than regular biscuits.  I see the recipe says to roll the dough to 1/2 inch thick--I like a taller biscuit so I usually roll it out a bit thicker than that.
