No Bake Pumpkin Cream Cheese Pie
This is a yummy layered pumpkin dessert with a graham cracker crust that is perfect for fall or Thanksgiving.
My family loved this dessert. It's hard not to love anything with a graham cracker crust. It has four layers: a graham cracker crust, a cheesecake layer, a pumpkin layer, and whipped cream on top. It's an amazing blend of flavors!
No Bake Pumpkin Cream Cheese Pie
1. Mix together:
6 tbsp butter, melted
7.5 graham crackers, crushed
1/3 cup sugar
Press into the bottom of a 9x9 pan or a deep pie dish (then lick your fingers, yum!). Alternatively, you could buy a premade graham cracker pie crust.
2. In a mixer, using the wire whips, blend together:
4 oz cream cheese (1/2 block)
1/2 cup whipping cream
1/4 cup sugar
Spread over crust.
3. In the mixer, blend together:
1/2 cup milk
1 1/2 packages vanilla pudding
1 cup pumpkin (about half a can)
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp cinnamon spice (I made my own with this recipe)
1/4 cup sugar
Spread on top of the cream cheese mixture.
4. To make whipped cream topping, whip until stiff peaks form:
1/2 cup whipping cream
6 tbsp powdered sugar
1/2 tsp vanilla
Spread on top. Chill for several hours before serving.
