Chocolate-oatmeal bars
Do you need something for a dessert that is remotely healthy? Here's one idea.
Chocolate-oatmeal bars
In a (good) food processor or blender, process the following ingredients:
1/2 c. mixed nuts
1/2 c. craisins
1/2 c. raisins (or 1 c. total dried fruit)
1/4 c. whole wheat flour
1 tsp. cinnamon
1/2 tsp. salt
1 c. coconut flakes
1/4 c. cocoa powder
When these are all ground up and indistinguishable, then add:
3 ripe bananas
1/4 canola oil
1 tsp. vanilla extract
This should make a thick batter.
Add 1-1/2 c. oats and blend until just combined (unless you don't want to see any oat flakes)
Spread in a 9x13 pan and bake at 325 degrees for about 30 minutes. Let cool and slice into bars. These will be soft and chewy. If you want them harder, then you should bake them about 15 minutes longer.
Eliza's notes: They turn out sort of like the expensive "power (granola) bars" you can buy at a store. They are healthy and filling. They also taste "healthy," which means the kids weren't thrilled with them, though they did try them. I think you could mix in 1/2 cup mini-chocolate chips at the end, if you wanted to make them into more of a treat.
