Unbaked Cookies


Unbaked Cookies
Mix in pan on stovetop:

2 cups sugar
½ cup milk
½ cup margarine
4 Tb. cocoa, optional

Bring to a boil and boil for one minute. Remove from heat and add:

½ cup peanut butter (chunky or creamy)
3 cups instant oatmeal
1 tsp. vanilla

Drop on wax paper to cool.

  1. Sometimes my cookies turn out gooey. Does anyone know how to avoid this?

  2. My first guess is that it has to do with how long you cook it. If you cook it too long, the sugar crystalizes. If you cook it too little, it seems to turn out gooey. The other guess with gooey is that they turn out gooey when I'm rushing and not measuring well--they have too much peanut butter, for example.

  3. I usually double this recipe and then pour the whole mass into a jelly roll pan. Then I let it cool and cut it in squares. These bar cookies are easy to pack and store for school lunches.

  4. My cookies come out gooey if I don't add about 1/4 cup more oatmeal. I also have to double the cooking time if I double the recipe.
