Fried Eggs in Toast

A variation on eggs and toast.

Thick slices of bread
Butter
Eggs
Salt
Pepper

Butter both sides of each bread slice. Use a cookie cutter or biscuit cutter to cut a hole in the center of your bread slices. I used homemade wheat bread, but this will work with any substantial bread. Place the bread on a griddle that is only on medium heat. If the griddle is too hot, the bread will burn before the egg cooks. Crack an egg and carefully put one egg into each hole. The children like scrambled eggs better, so I poured some scrambled eggs into the hole for their toast. Salt and pepper the egg, if you want. When the egg is set on one side, carefully turn the toast over and cook on the other side. This takes a bit of practice. I toasted the extra pieces of buttered bread and served those as well.
