Coconut Crispy Rice Cereal Bars

4 cups coconut, toasted
1/2 cup butter
20 oz. marshmallows
1/2 tsp. coconut extract, optional
9-1/2 cups crispy rice cereal

Toast coconut and let cool. Melt the butter. Add the marshmallows and melt. Add the extract, if using, the rice cereal, and the coconut. Mix well. Spread into a greased 9x13 pan and let set. If you want, you can make a frosting with 1 cup powdered sugar and 2 Tb. water and spread that over the of the bars. Then sprinkle about 1 cup coconut on top and lightly press into the frosting.
