Banana Bread

Banana Bread
½ cup oil
1 cup sugar
1 egg
4 ripe bananas
2 cups flour
1 tsp. soda
½ tsp. salt
1 tsp. vanilla
1 cup nuts, optional

Mix together the oil, sugar, egg, and bananas.  Add the vanilla.  Stir together the flour, baking soda, and salt.  Gently mix the dry ingredients into the wet.  Add nuts, if desired. Grease small bread pans and fill half full. Bake for approximately 1 hour at 350°.  Or, make as muffins and bake for about 15 minutes.

Tiffany's note:  For people allergic to dairy or eggs--this is a great dairy free recipe and is easily changed to make an egg-free version as well!
