Crepes with strawberry cream

I have sisters who are more experienced at making crepes, and so I'll let them do a crepe post. But here's a nice strawberry cream that could be served with a variety of breakfasts or desserts.



Strawberry Cream
Place the following in your blender:
4 pitted dates, soaked in water beforehand if they are hard
2 cups strawberries (I used frozen strawberries that were mostly thawed)
1 banana, peeled
1/2 cup water, or less, if you want the cream thicker

Blend for about 30 seconds, or until completely smooth. Store in the refrigerator until ready to use.

We put the strawberry cream inside (and on top of) some crepes for a nice dessert. We also added a bit of regular whipped cream as a garnish, though this isn't necessary.
