Perfect Microwave Rice


If you have ever had to scrub out a pan of burned rice, cleaned boiled-over rice water off your stove, or over-cooked rice in a pressure cooker, then this is a recipe you definitely need. I like the texture of the rice when it's cooked, and the fact that there is no mess at all to clean up. I like jasmine rice for most of my cooking, but any long grain rice works with this recipe.

Perfect Microwave Rice

2 cups long grain rice
3-1/2 cups water or chicken broth (two 14-oz cans)
1-1/2 tsp. butter or oil
1/2 tsp. salt

In a large microwave-safe bowl, mix all the ingredients together. You can add pepper, or other spices if you wish.

Cook the rice uncovered in the microwave for 10 minutes on high power. Do not stir the rice. Cook the rice for an additional 15 minutes at 50% power. Fluff the rice and serve. Makes about 5-6 cups of rice.
