Bacon and Ranch Pinwheels

I don't make hors d'oeuvres very often (and I have to look up how to spell them!).  However, I do know what they are.  Here is an easy way to explain them (thanks to an online dictionary!). Hors d-oeuvres are: "a small savory dish, typically one served as an appetizer at the beginning of a meal."  Some people call them finger foods.  

I was asked to bring some hors d'oeuvres to a reception recently and used a quick adaptation of Flour Tortilla Hors D'oeuvres that Becky posted earlier.  

Bacon & Ranch Pinwheels
1 pint sour cream
1 (8 oz.) pkg. cream cheese, softened
2 Tb. ranch salad dressing flavoring mix
1/2 cup real bacon pieces or real bacon bits
1 cup shredded cheddar cheese (optional)
1 pkg. (about 8) large flour tortillas, room temperature

Mix the sour cream, softened cream cheese, and ranch flavoring and spread thinly on flour tortillas. Lightly sprinkle the bacon pieces and the (optional) shredded cheese on the tortillas.  Start at one end and gently roll up tortillas.  Place the tortilla rolls in a covered dish or wrap them in plastic wrap.  Chill for at least 30 minutes. Gently slice the tortilla rolls into 1-inch pieces. Serve.  You can spear each one with a toothpick to serve.

Tiffany's Notes: I suggest spreading the cheese mixtures thinly, but make sure you get it all the way to the sides.  They will keep chilled for several hours.  You may even want to slice them in thinner than 1 inch slices.
