No Bake Cookie Energy Bites


1 c. old-fashioned rolled oats
1 c. coconut, sweetened or unsweetened
1/2 c. ground almonds, flaxseed, or wheat germ
1/2 c. mini chocolate chips
1/2 c. honey
1/2 c. creamy peanut butter
1 tsp. vanilla extract

 Mix together in large bowl until well blended. Roll mixture in small balls and place on parchment paper lined baking sheet. Freeze until completely set, at least 1 hour. Transfer to container and store in freezer. These are good to eat frozen.
