Peanut Butter Balls

Peanut butter balls are simple to make, but very yummy. They are similar to peanut butter buckeyes, but they have Rice Krispies in the filling, which adds a nice crunchy texture.


Peanut Butter Balls

Mix together until smooth:
3/4 cup margarine, melted
2 cups peanut butter

Add:
1 lb. (4 cups) powdered sugar

Stir in:
3 cups Rice Krispies

Roll into one-inch balls and refrigerate for at least 1/2 hour or overnight. Melt about 4 cups of chocolate and dip in melted chocolate. Let chocolate harden. This makes 60 to 70 small balls.


Melinda's Notes: We make these for Easter almost every year. You can also press this into a parchment or wax-paper lined tray, spread chocolate on the top, and cut it into squares to save time.

Eliza's Notes: I only partially dipped these and they turned out like this:
(The other chocolates have cream cheese centers or almond paste and fudge.)

  1. I love these! I remember always having these at Easter time as well. They were egg shaped.
